This week is my husband’s and son’s birthdays. I won’t tell you how old they are, because I can hardly believe it myself. I’ve been making this cake since the kids were little. Today, since my arm is still healing from my recent fracture (it’s going well), my daughter made it for her dad and brother.
Even though it’s vegan, it’s not exactly a “health food” cake. And of course, it’s good for other special occasions. It may look fancy, but this recipe is easy to make and doesn’t take much hands-on time.
So if you have some birthdays coming up in your family or circle of friends, give this crowd-pleasing cake a try.
This recipe is one that has been passed around from person to person, origin unknown, both in real life and on the web. I’ve tinkered with it until it became my own. I also concocted a simple chocolate-peanut butter frosting, which is literally the icing on this moist cake.
